Traditional Maqluba Recipe: INGREDIENT, SPICES, DIRECTIONS

Maqluba is the authentic dish of Iraq, Jordan, Lebanese, Palestine, and Syria dishes served through the Levant. It includes meat, chicken, vegetable, and long grain basmati rice. Maqluba means upside down because we acquire the pot and turn over it upside down straight on the serving plate.

This dish is part of the Jordanian culture, and it is the National Dish of Palestine. At the same time, adding the basmati rice to the recipe. The dish is more authentic and flavorful because of the aroma of long grain basmati rice. 

Can I Use Other Meat For This Recipe?

Traditionally in Jordan and Palestine, it is more famous for using chicken for the Maqluba recipe. But you can also use mutton or fish in place of chicken. The only problem is that mutton or fish takes too long to boil mutton or fish to make it more tender and moist. 

CHICKEN MAQLUBA RECIPE:

PREP TIME: 20 minutes

COOKING TIME: 1 hour 15 minutes

INGREDIENT:

  • Eight-piece chicken drumstick and thigh
  • 2.5 cup of Long Grain Basmati Rice
  • One large Cauliflower head
  • Two long eggplant
  • Two large size potatoes
  • 5 cup water for boiling and making broth

SPICES FOR THIS RECIPE:

  • 1 tbsp of allspice
  • 2 tbsp of garam masala
  • ½ tbsp turmeric
  • Four bay leaves
  • 1 tbsp of salt
  • ½ tbsp of black pepper

DIRECTIONS:

1. Put the chicken and water in the pot. Add it into the gas stove and turn on the heat.

2. Remove the excess fat or dirt from the boiling chicken, at the boiling time using a turner or spoon. After adding all the spices, give it a little stir. Let the chicken cook for 30 minutes.

3. While the chicken is cooking, chop the vegetables, i.e., potatoes, eggplant, and cauliflower, to fry them.

4. Put the vegetable in the oil to fry in a separate pan. Add the potatoes until they become light brown. Next is to fry the cauliflower and the eggplant.

5. When the chicken is cooked correctly, take out the chicken from the broth. Dry the chicken with the help of a tissue or kitchen towel, and then fry in the same pan. It prevents oil from splashing.

6. After all the vegetables and chicken-fried well then transfer it to the large bowl. 

7. Prepare the dish in layers.

8. The first layer is 1/5th of the rice, and then half of the fried vegetables and the chicken. 

9. For the second layer, repeat by putting the 1/5th rice and then put the remaining vegetable and chicken. 

10. Then, put the remaining rice in the pot and transfer the chicken from the old pot into a new pot.

11. Turn on the high heat and let the water boil. When the water is completely absorbed, reduce the heat. Cook for more than 15 minutes.

12. Prepare a large round plate. Bring the pot to the plate and instantly flip it upside down.

13. Get an excellent round cake shape like Maqluba. Garnish it with nuts and serve with yogurt and salad.
